This coffee originated in Brazil, more precisely in the town of Patrocínio, in the south-east of the country. It is produced on the Chapadão de Ferro terroir, in the famous Cerrado Mineiro region. This gourmet coffee with its chocolate flavours is a mechanically dried 100% arabica coffee. It can be enjoyed as an espresso or a lungo!
Lilith is grown by several producers on the Chapadão de Ferro terroir, one of the highest in the region, at an altitude of around 1,200m. The ancient volcano on which the coffee trees are grown provides rich, light soil, ideal for Arabica cultivation. In this region, coffee cherries ripen in July and are harvested until September. More precisely, this coffee comes from the Cerrado Mineiro region, recognized as the highest-quality coffee-growing region in the state of Minas Gerais! Active on the coffee-growing scene only since 1960, the region has made a name for itself for the quality of the coffees it produces: gourmet, without too much acidity and with a rather cocoa-like profile.
However, the Cerrado's neighboring regions have all too often usurped the Cerrado appellation. Until a few years ago, around 10 million bags a year were sold as "Cerrado", whereas the region's actual production capacity was only 5 million bags! In 2013, producers were awarded the “Cerrado Mineiro” Denomination of Origin (DO).
This label certifies the origin of a coffee and ensures that it possesses the qualities specific to the terroir of origin. If you drink a coffee with this denomination of origin - as is the case with Lilith coffee - you are assured of drinking an Arabica coffee
At the moment, more than 4,500 producers spread over some 17,000 hectares are part of the Denomination of Origin. An independent organization verifies the coffees and certifies whether or not they qualify for the "Cerrado Mineiro" appellation.
Lilith, according to the apocryphal story, was Adam's first wife (before Eve). Unwilling to submit, she was condemned to hell for this affront. Lilith thus represents the personification of rebellion. So why name a coffee after her? On his first trip to Brazil, Angel Barrera, our sourcing manager, discovered a coffee with an atypical profile that he didn't expect to find in this region. A rare profile for Brazil, and at the same time very feminine, so we decided to link this profile to this mystical character.
