Instead of throwing away the pulp and skin, they are dried to make a delicious infusion. Discover another side of coffee with Cascara, a natural and surprising drink made from the dried pulp of the coffee cherry. In Spanish, cascara means “shell” or “bark”: it is the part of the fruit that is usually removed to keep only the bean, which ends up roasted in your cup of coffee. Here, we give this whole fruit back its full value!
The coffee cherry has several layers: a thin skin, fruity pulp, mucilage, a protective shell, and finally, the famous coffee bean. Traditionally, only the latter is used to produce coffee. The rest - the pulp and skin - is often thrown away or composted. Cascara is the art of reusing this pulp to make a mild and tangy infusion that is both environmentally friendly and full of unique flavors.
By infusing the dried bark of the coffee tree, you get a red-colored drink that is naturally caffeinated, antioxidant, and draining. It is therefore an excellent alternative to coffee or traditional tea:
