Our Mosaico embodies quality, tradition, and respect for the environment. Harvested by hand in the beautiful mountains of Espírito Santo, Brazil, this 100% Arabica coffee is grown by small family farms practicing sustainable agriculture. Imported by wind-powered cargo ship, Mosaico is one of our most virtuous and exceptional coffees.
But where does its name come from? Mosaico, or "mosaic" in Portuguese, refers to several aspects:
In the heart of the Espírito Santo mountains, coffee cultivation is a tradition passed down through generations. This unique terroir, characterized by high altitude and humidity brought by the Atlantic Ocean, provides ideal conditions for producing exceptional Arabica beans.
The farms in this region are small, often 5 hectares, and the harvests are done by hand, ensuring a careful selection of cherries. This process, rare in Brazil, reflects the dedication of local producers, committed to preserving their rich biodiversity environment. The result? A coffee with beautiful acidity and flavors reminiscent of the finest Colombian coffees.
Mosaico is one of our coffees imported by sail, a project that is especially close to our hearts. It is, in fact, the most responsible mode of transport today and offers several advantages:
The specialty coffee industry is particularly interested in larger-sized beans, which only represent 40-50% of total production. The rest is devalued, leading to lower incomes for farmers.
However, these smaller beans are of the same quality, if not better, with a higher density due to their more compact size.
Mosaico’s producers aim to reach the “full profitability farm,” where these smaller-sized beans are appreciated at their true value, sold at a fair price, and contribute to farmers' income.
Our coffee comes from partner producers at Fazenda Ambiental Fortaleza (FAF), a pioneering organization in organic and sustainable farming practices in Brazil. Since 2001, FAF has supported farmers in their transition to ecosystem-friendly methods while promoting local biodiversity.
FAF also plays an educational role by sharing its expertise with partner farms. This includes techniques such as agroforestry and the use of natural hedges to protect wildlife and enrich soils. By valuing natural cycles, these practices ensure healthy crops while producing very high-quality coffee.
Mosaico, like all our coffees, is artisan-roasted in the Ardennes. We practice slow roasting, which allows the aromas to develop. To learn more about our roasting practices, visit our blog (in French)!
