The strength and flavor of a delicious Mexican coffee, without the caffeine!
This coffee comes from southwestern Mexico and combines several Arabica varieties in a refined blend crafted by Jorge Arreola Nava. It includes Catimor, Sarchimor, and Red Caturra, grown at over 1,200 meters above sea level. A decaf blend from Mexico you must try for your late afternoons!
Chiapas coffees are known for their harmonious balance of sweetness and acidity. They develop notes of flowers, honey, citrus, and sometimes chocolate, with a generally velvety texture. Here, you’ll enjoy an even more indulgent and sweet profile in your cup: flavors of spices, grapes, brown sugar, and milk chocolate are at play.
The Mexican state of Chiapas is located in the south of the country, on the border with Guatemala. Dense tropical forests, turquoise lagoons, misty mountains: Chiapas' geography is particularly rich. It accounts for 40% of Mexico's total coffee production.
The neighboring Guatemalan region of Huehuetenango, a famous coffee-growing area, shares many similarities in the aromatic profile of its coffee.
Coffee is produced here by indigenous communities such as the Mayas, Tseltal, Tzotzil, Ch'ol, and Tojol-ab, who have been cultivating coffee for generations within supportive family cooperatives.
After harvesting (which takes place between August and December), the coffee cherries are dried using patios or mechanical dryers. Then it’s time to make this coffee caffeine-free !
Here, we offer a water-decaffeinated coffee, using the Mountain Water process: a natural method that involves no chemicals and removes caffeine molecules through osmosis.
This step is handled by the Mexican company Descamex, the only one in the country that decaffeinates coffee with water. The coffee beans are exposed to steam and then immersed in water to remove the caffeine.
Finca Santa Fé was established in 1855 by a Mexican family and was acquired in 2009 by Jorge Arreola Nava, who converted it to organic farming. One of his main goals is to actively combat pollution in the mountains and coffee-growing areas, including banning hunting and flower picking.
